  • 1/2 cup hash brown potatoes
  • 1/2 cup mushrooms
  • 1/2 cup red, yellow and orange peppers chopped
  • 1/2 cup broccoli florets
  • 1/4 cup onion chopped
  • 1/2 avocado sliced

Instructions
  1. Heat a skillet with 1 tbsp olive oil. Add potatoes cook for 2 minutes. Add other ingredients and cook until vegetables are tender. Season with salt and pepper. Transfer to plate and top with fresh avocado slices. Calories: 161 Carbs: 21 g Fat: 8 g Protein: 4 g
