Cut and seed avocado. Place 1/4 of the avocado off to the side.
Place rest of avocado into a blender along with garlic clove, salt and pepper. Turn blender on at a low speed. Slowly add vegetable broth until mixture is desired thickness. Cut avocado you placed to the side into small chunks. Pour soup into a bowl. Top with chopped red peppers and chopped avocado.
